Secret Ingredient Tomato Soup

We originally made this soup to be featured as a ‘Vitamin C-rich recipe.’ Did you know that tomatoes can contain as much vitamin C as oranges?

(Serves: 6-8)

Ingredients:

  • 1 Tbsp olive or avocado oil

  • 1 large onion - diced

  • 3 cloves garlic - minced

  • 4 cups vegetable broth

  • 1 can white kidney beans

  • 2 (28oz) cans San Marzano tomatoes

  • ⅓ cup sundried tomatoes packed in oil 

  • 1 (5.5oz) can tomato paste

  • 2 tsp dried oregano

  • 1 tsp dried thyme

  • 1/2 tsp black pepper


Directions: In a large pot on medium heat, add oil then onion and garlic. 

In a large blender, combine broth, beans, canned tomatoes, sundried tomatoes, tomato paste, spices and onion mixture from the pot. Blend until smooth.

Return mixture to the pot and simmer on medium heat for about 30 minutes.
