Peach Salsa Salmon

We think peach season is the best season. If you have some extra peaches kicking around, try making this peach salsa salmon. PS: you could also use this salsa as a snack with some chips or on fish tacos - yum!

Prep time: 15 minutes

Cook time: 20 minutes

(Serves: 4-6)

Ingredients:

  • 1 slab salmon

  • 2 tsp paprika

  • Salt & pepper

  • 1 avocado (or 1 pint cherry tomatoes)

  • ½ small red onion - finely diced

  • 1 large peach - diced

  • ¼ cup chopped cilantro

  • 1 small jalapeno - finely diced (optional)

  • 1 lime - juiced

  • Salt & pepper to taste

Directions:

  1. Preheat the oven to 400 F.

  2. On a baking sheet, place the slab of salmon. Season with paprika, salt and pepper. Bake for 20 minutes.

  3. While salmon cooks, make the peach salsa. Add avocado, red onion, peach, cilantro, jalapeno (if using), lime juice, salt and pepper to a bowl and stir well.

  4. For serving, top each piece of salmon with peach salsa. Serve with rice or quinoa. :)
