Pumpkin Granola Bars

(Servings: 16-20)

Ingredients:

  • 2 ½ cups large flake oats

  • ¾ cup coconut

  • ½ cup slivered pumpkin seeds - chopped

  • ¼ cup dried cranberries - chopped

  • ¼ cup mini chocolate chips

  • 2 Tbsp chia seeds

  • 1 tsp cinnamon

  • ½ tsp salt

  • ¾ cup canned pumpkin

  • ½ cup honey or maple syrup

  • ¼ cup coconut oil or butter - melted

  • 1 tsp vanilla extract

Directions:

  1. Line a 9 x 13 baking dish with parchment paper. Preheat the oven to 350 F.

  2. In a large bowl, combine oats, coconut, pumpkin seeds, cranberries, chocolate chips, chia seeds, cinnamon, salt and chia seeds.

  3. In a separate smaller bowl, stir together pumpkin, honey, coconut oil and vanilla extract.

  4. Add wet ingredients to dry ingredients and mix together well.

  5. Using hands, press the mixture into the prepared baking dish.

  6. Bake for 25 minutes or until the top begins to feel dry.

  7. Let sit on a rack until completely cooled. Cut into 16-20 bars.
