Fruit Pizza
Invited out to dinner and not sure what to bring for dessert? This recipe is for you!
(Serves 6-8)
Ingredients:
2 cups quick oats
¾ cup oat flour
1 tsp cinnamon
¼ tsp salt
3 Tbsp coconut oil - melted
¾ cup honey
1 tsp vanilla extract
1 (500g) tub of vanilla greek or skyr yogurt
2 cups of your favourite fruit (ie. 1-2 kiwis, ½ cup blackberries, ½ cup blueberries, ½ cup raspberries, ½ cup strawberries)
Directions: Grease a 10” pizza pan with butter or coconut oil. Preheat the oven to 350 F.
Mix together the oats, oat flour, cinnamon and salt. In a separate bowl, combine the melted coconut oil with honey and vanilla extract. Pour the wet ingredients into the dry ingredients and mix well. You may need to use your hands for this step!
Spread the oat mixture on the prepared pizza pan. Bake for 10 minutes or until the edges start to brown. Let cool completely.
Once the base layer is cooled, spread the tub of greek yogurt evenly over the top.
Layer on the fruit (my favourite combination of fruit for this recipe is listed above!) in a single layer.
Cut into pizza slices and enjoy! [I like this even more on day 2 as the crust has some time to soften from the greek yogurt so it is tastier and easier to cut.]
