Maple Cranberry Brussels
(Serves: 4-6)
Ingredients:
4-5 cups brussel sprouts - trimmed & cut in half
3 Tbsp avocado oil
½ tsp salt
2 Tbsp maple syrup
⅓ cup dried cranberries
¼ cup goat cheese or feta cheese - crumbled (optional)
Directions:
Preheat the oven to 400 F. Line a baking sheet with parchment paper.
Toss together the brussel sprouts, oil and salt. Spread in a single layer on the baking sheet. Bake for 30 minutes.
Remove from the oven, drizzle with maple syrup and use tongs to toss together. Bake for an additional 5 minutes.
Transfer the cooked brussel sprouts to a serving platter and top with cranberries & goat cheese or feta cheese.
