Maple Cranberry Brussels

(Serves: 4-6)

Ingredients:

  • 4-5 cups brussel sprouts - trimmed & cut in half

  • 3 Tbsp avocado oil

  • ½ tsp salt

  • 2 Tbsp maple syrup

  • ⅓ cup dried cranberries

  • ¼ cup goat cheese or feta cheese - crumbled (optional)

Directions:

  1. Preheat the oven to 400 F. Line a baking sheet with parchment paper.

  2. Toss together the brussel sprouts, oil and salt. Spread in a single layer on the baking sheet. Bake for 30 minutes.

  3. Remove from the oven, drizzle with maple syrup and use tongs to toss together. Bake for an additional 5 minutes.

  4. Transfer the cooked brussel sprouts to a serving platter and top with cranberries & goat cheese or feta cheese.
