Mini Egg Protein Baked Oatmeal

Here is an easy prep ahead breakfast option with a protein twist.

(Serves: 4-6)

Dry Ingredients:

  • 2 cups oats

  • ¼ cup brown sugar

  • 2 scoops vanilla protein powder

  • 1 ½ tsp baking powder

  • Dash of salt

Wet Ingredients:

  • 1 ½ cups milk

  • 2 eggs

  • ¼ cup almond butter

  • 1 tsp vanilla extract

  • ¾ cup micro mini eggs

  • Regular mini eggs (for topping)

Directions:

  1. Preheat oven to 350.

  2. In a large bowl, stir together the dry ingredients. In a separate bowl, mix together the wet ingredients. Add wet ingredients to dry and stir together.

  3. Top with additional mini eggs. Bake for 30-35 minutes.

  4. Let cool & cut into 4-6 pieces

** Note: If serving to your littles, omit the protein powder.
