Mini Egg Protein Baked Oatmeal
Here is an easy prep ahead breakfast option with a protein twist.
(Serves: 4-6)
Dry Ingredients:
2 cups oats
¼ cup brown sugar
2 scoops vanilla protein powder
1 ½ tsp baking powder
Dash of salt
Wet Ingredients:
1 ½ cups milk
2 eggs
¼ cup almond butter
1 tsp vanilla extract
¾ cup micro mini eggs
Regular mini eggs (for topping)
Directions:
Preheat oven to 350.
In a large bowl, stir together the dry ingredients. In a separate bowl, mix together the wet ingredients. Add wet ingredients to dry and stir together.
Top with additional mini eggs. Bake for 30-35 minutes.
Let cool & cut into 4-6 pieces
** Note: If serving to your littles, omit the protein powder.
