Go To Granola
As the name suggests, this is our ‘go to’ granola to make yogurt parfaits, to use as cereal or to add on top of smoothie bowls!
(Serves: 6-8)
Ingredients:
2 ½ cups quick oats
⅓ cup ground flax seed
¼ cup chia seeds
½ cup unsweetened coconut
1 Tbsp cinnamon
¼ tsp salt
2 Tbsp coconut oil - melted
⅓ cup honey
1 tsp vanilla extract
Directions:
Preheat the oven to 300 F. Line a large baking sheet with parchment paper.
In a large bowl, combine the oats, flax, chia, coconut, cinnamon and salt.
In a separate bowl, combine the melted coconut oil with the honey and vanilla. Stir until well combined. (This step can also be completed on low heat on a stovetop until all ingredients are combined).
Pour wet mixture over dry ingredients and mix until well combined. You may have to use your hands to mix it well!
Spread on the parchment lined baking sheet and bake for 20 minutes.
** For a chunky granola, do not stir the mixture during baking. For a looser texture, stir the mixture after 12 minutes of baking, then continue to bake for the remaining 8-10 minutes.
