Banana Berry Baked Oatmeal

(Serves: 6)

Ingredients:

  • 2 cups quick oats

  • 1 ½ tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp salt

  • 1 egg

  • 1 overripe banana - mashed

  • ¼ cup brown sugar

  • 1 ½ cups milk

  • 1 tsp vanilla extract

  • 1 cup frozen mixed berries

Directions:

Grease a 9x9 baking dish with butter or coconut oil. Preheat oven to 350 F.

In a bowl, mix together the oats, baking powder, cinnamon and salt. In a separate bowl, whisk together the egg, mashed banana, brown sugar, milk, and vanilla. 

Pour the wet ingredients into the dry ingredients and stir to  combine. Gently fold in the berries.

Bake for 35 minutes. Once cooled, cut into 6 pieces.

Store in the refrigerator for a couple of days or freeze slices for convenient breakfasts on busy mornings!
