Festive 10 Minute Meal

We are big fans of lentil and chickpea pastas as they provide a good source of both fibre and protein. Kinda like a two-for-one deal in the nutrition department!

(Serves: 3-4)

Ingredients:

  • 1 pkg of your favourite lentil or chickpea pasta

  • Dash of avocado oil

  • 1 pint cherry tomatoes

  • 1 cup frozen shelled edamame

  • Jar of green pesto 

  • Fresh or dried basil (if you want to be fancy)

Directions: 

Boil pasta as per package directions.

In a frying pan on medium heat, add oil, tomatoes and edamame until blistered and slightly browned.

Once pasta is cooked, drain and add to a bowl with tomatoes, edamame & stir in as much pesto as your family desires! Garnish with basil.
